A favorite recipe made best in the summer with loads of fresh garden produce! Grass-fed beef, potatoes in every color, tomatoes, peppers, golden raisins (for a touch of sweetness) and spices in a scratch-made pastry crust. There are many kinds of empanadas, but this variation is inspired by an Argentinian recipe and is my favorite! Instead of the handheld empanadas which are more labor intensive to make, this version serves the whole family (with more fillings) in a pot-pie style dish.
